A Taste of Egypt: Baked Zucchini Fries

Okay, so it's not entirely an Egyptian recipe, but they use Zucchini (also known as courgettes to us Brits) for a host of recipes. Here's a quick and easy recipe for Baked Zucchini Fries that are sure to be a hit with friends and family.

Here's what you'll need:
1.2 kg of zucchini
1 cup bread crumbs
1/4 cup all purpose flour
1/4 cup Parmesan cheese
1 large egg
1 tbsp mixed spices 
1/8 tsp salt

  1. Slice your zucchini into strips (removing the ends) that are about 1/4 inch thick. Rinse well and let dry completely. (setting them on paper towels works best for this step)
  2. Preheat your oven to 180 Celsius.
  3. Combine your flour and salt in a zip-lock bag or large bowl. 
  4. Coat your zucchini strips with the flour mixture. To ensure an all around even coating the best way is to add the strips to your flour bag, seal the zip lock and shake gently. 
  5. In a wide, shallow bowl, combine your bread crumbs, Parmesan cheese, and mixed spices. 
  6. Crack your egg in a separate bowl and whisk briefly. 
  7. One by one, gently submerge your zucchini strips in the egg, and then coat with the bread crumb mix, ensuring an even coating all around. 
  8. To avoid soggy bottoms on your zucchini strips, bake on a wire rack in your oven for approximately 15 minutes, until they have reached a light golden colour. 


And you're done! Eat as an appetizer, or why not try to liven them up with some Roasted Red Pepper and Garlic Hummus on the side.
